Brunswick Stew
Over the years, we have amassed a large collection of Dutch oven recipes, and we enjoy sharing them
with others who appreciate this form of cast iron cooking. The popularity of Dutch oven cooking has increased
greatly over the past several years as many people discover the benefits of using these cast iron pots and
associated pieces of cast iron cookware. Most of our recipes can be used for indoor cooking in your oven or
outdoors in a more traditional campfire setting.
Like a thick warm soup, this stew is packed with tender, juicy pork loin roast, chicken and mouth-watering
combination of vegetables. An excellent dish that even you can’t wait to dig in while cooking! This dish is
certainly a must-have have to every recipe box. Very hearty and warming for a chilly winter's day.
Ingredients:
1 Pork Loin Roast; 5 lb
2 Broiler/Fryer; 3 lb each
4 1/2 lb Potatoes; peeled, ground or coarsely shredded
1 28 ounce can of Tomatoes undrained, mashed
1 Bottle Mustard/mayonnaise sauce 10 oz
2 Cans Cream Style Corn; 17 oz each
1 Can whole-Kernel Corn drained
1 Package frozen lima beans thawed and drained
3 lb Onions; ground or chopped
2 Bottles Catsup, 14 oz each
1 Bottle Worcestershire 5 oz
2 Lemons; just the juice
1 cup margarine
1 tablespoon salt
1 teaspoon pepper
3 qt Water
Cooking Instructions:
Prep time: 10 minutes
Cooking time: 25 minutes
Cooking Steps:
- Remove the meat from the broth.
- Shred, skin and bone the meat; cover and let it
stand.
- Cover and refrigerate the broth for about 8 hours or overnight then discard
the solidified fat.
- In a pan, heat the broth then add onions, potatoes, tomatoes, catsup,
mustard, Worcestershire, lemon juice, margarine, salt and pepper. Bring into a boil then reduce the heat and
let it simmer uncover for about 2 hours.
- Add the reserved meat, cream-style corn and, whole kernel corn, and lima
beans. Bring into a boil then reduce the heat and let it simmer uncover for 2 hours more or until desired
consistency. Add water if desired.
- Serve hot.
